Simple Recipe: The Perfect Sponge Cake

The experience of baking your own fresh cake at home is a special experience.

It’s also so relaxing when you’re busy mixing your ingredients and exciting when you finally take it out of the oven when it’s done.

For people who have never tried baking their own cake at home, the process seems tedious. And sometimes you may want to bake a cake for you and your family to enjoy, but just don’t have the time to do everything, including the frosting and toppings.

The good news is that there is a way to enjoy fresh cake without spending hours in the kitchen. The secret is to learn some easy cake recipes, like in this case a simple sponge cake recipe.

An original sponge cake should have that characteristic soft, airy and spongy texture. You need to use a specific technique to achieve that and below is a guide on how to make one.

What you will need:

  • ¾ cup cake flour
  • ½ cup of sugar
  • 3 eggs
  • 2 tablespoons of milk
  • 2 tablespoons of vegetable oil
  • ½ tsp vanilla essence
  • A pinch of salt

Step one

Start by taking two bowls first. Using an egg yolk separator, separate the whites in one bowl and the yolks in the other.

Then take the bowl with the yolks, add a pinch of salt and half a teaspoon of vanilla extract and mix well. If you want your cake to have a different flavor, you can replace vanilla essence with another flavor, be it orange, banana, or any other flavor you like.

Step two

Once that’s done, set that bowl aside and have the one with egg whites. Mix with a mixer, preferably an electric one for convenience, until it starts to foam.

As soon as it turns into a foam, pour in the sugar in batches of three while mixing. You will notice the foam thickening and by the time you add the third portion of sugar, it should have a creamy texture.

Step three

Then take your bowl with the egg yolk mixture and pour it into this bowl. Mix well until well combined.

When everything is well mixed, take a sieve and sift the flour into the bowl. This should remove any impurities for a smooth texture.

Mix slowly with a spatula from the bottom to the top to prevent lumps from forming. Mix until all the flour is well incorporated into the mixture. You can also pour the flour into three parts while mixing.

Step four

In another small bowl, mix two tablespoons of milk and two tablespoons of vegetable oil. Once you have mixed well, scoop out a small amount of the cake batter and mix into this bowl.

Once you’ve mixed them well, pour the batter back into the bowl with the other portion. Mix the ingredients for a few minutes, being careful not to overmix them. This ensures that you get an airy texture.

Step five

Finally, preheat the oven to 180°C for about ten minutes. While doing that, line your baking sheet with enough parchment paper to cover the entire cake. You can also prepare your pan by applying a layer of oil.

You then carefully pour the batter and gently tap the baking sheet on a flat surface to remove any air bubbles. Put it in the oven for about 30 minutes and when it’s done, let it cool down, then remove the baking paper and serve it with some tea. Enjoying!
